Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook until al dente, about 8-10 minutes. Reserve 1/4 cup of the pasta cooking water, then drain the noodles.
  2. Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes, taking care not to burn it.
  3. Cook Greens: Add the chopped mixed greens to the skillet with the garlic. Cook, stirring occasionally, until the greens are wilted but still vibrant in color, about 3-4 minutes. Season with salt and black pepper to taste. Remove from heat.
  4. Butter Noodles: Return the empty pasta pot to the stovetop over low heat. Add the butter and allow it to melt.
