Instructions
- Cook Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook until al dente, about 8-10 minutes. Reserve 1/4 cup of the pasta cooking water, then drain the noodles.
- Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes, taking care not to burn it.
- Cook Greens: Add the chopped mixed greens to the skillet with the garlic. Cook, stirring occasionally, until the greens are wilted but still vibrant in color, about 3-4 minutes. Season with salt and black pepper to taste. Remove from heat.
- Butter Noodles: Return the empty pasta pot to the stovetop over low heat. Add the butter and allow it to melt. Add the drained noodles back into the pot and toss to coat thoroughly with the melted butter. Stir in reserved pasta water a little at a time until the noodles reach a silky and smooth consistency.
- Assemble the Dish: Plate the buttered noodles and sautéed greens side-by-side to create a visually balanced bowl.
- Add Garnish: Sprinkle optional chili flakes, lemon zest, and grated parmesan over the dish if desired for extra flavor and texture.
