Ingredients
Scale
Tomatoes
- 4 medium green tomatoes, cut into 1/4-inch slices
- 1 teaspoon salt
Dredging Station
- 1/2 cup gluten-free all-purpose flour
- 2 large eggs
- 1/4 cup buttermilk
- 3/4 cup gluten-free cornmeal
- 1/4 cup gluten-free breadcrumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground black pepper
For Frying
- Vegetable oil, about 1/2 inch for frying
Instructions
- Prepare Tomatoes: Lay the tomato slices on a paper towel-lined tray and sprinkle both sides with salt. Let them rest for 10–15 minutes to release excess moisture, then gently pat dry.
- Set Up Dredging Station: Arrange three shallow bowls: one with gluten-free flour, the second with a whisked mixture of eggs and buttermilk, and the third with a blend of gluten-free cornmeal, gluten-free breadcrumbs, garlic powder, smoked paprika, and black pepper.
- Dredge Tomatoes: Coat each tomato slice first in the flour, then dip into the egg and buttermilk mixture, and finally press into the cornmeal-breadcrumb mixture to ensure an even, crispy coating.
- Heat Oil: Pour about 1/2 inch of vegetable oil into a large skillet and heat over medium heat until shimmering and hot enough for frying.
- Fry Tomatoes: Fry the coated tomato slices in batches, cooking each side for 2–3 minutes or until golden and crispy. Avoid overcrowding the pan to maintain oil temperature and even cooking.
- Drain and Serve: Remove fried tomatoes with a slotted spoon and drain on paper towels. Serve warm, optionally with dipping sauces such as ranch or remoulade.
Notes
- Fry in small batches to avoid overcrowding and ensure crispiness.
- Keep cooked tomatoes warm in a low oven until ready to serve.
- Serve with dipping sauces like ranch or remoulade for extra flavor.
- This recipe is suitable for gluten-free and vegetarian diets.
