Description

This Hearty Korean Beef Soup is the perfect cozy winter dinner, combining tender chunks of beef with earthy shiitake mushrooms, sweet carrots, and spicy Korean red pepper flakes. Simmered slowly in a flavorful beef broth enriched with garlic, ginger, and soy sauce, this comforting soup delivers a rich and satisfying taste that warms you from the inside out.

Ingredients

Scale

Main Ingredients

  • 1 lb of beef (chuck or brisket), sliced into bite-sized pieces
  • 6 cups of beef broth
  • 1 cup of sliced shiitake mushrooms
  • 2 medium carrots, sliced
  • 1 medium daikon radish, sliced
  • 2 chopped green onions
  • 4 cloves of garlic, minced
  • 1 inch of grated ginger
  • 1 tbsp of Korean red pepper flakes (gochugaru)
  • 2 tbsp of sesame oil
  • 3 tbsp of soy sauce

Instructions

  1. Preparation: Begin by prepping all your ingredients. Slice the beef into bite-sized pieces, wash and chop your vegetables thoroughly, and mince the garlic.
  2. Brown the Beef: In a large pot, heat the sesame oil over medium heat. Add the beef pieces, seasoning lightly with a pinch of salt. Brown the meat for about 5 to 7 minutes until it is seared evenly on all sides to develop depth of flavor.
  3. Sauté Aromatics: Add the minced garlic and grated ginger directly into the pot with the beef. Sauté them for 2 minutes, stirring frequently until fragrant, which enhances the soup’s aromatic profile.
  4. Cook Vegetables: Stir in the sliced shiitake mushrooms, carrots, and daikon radish. Continue cooking for another 5 minutes, allowing the vegetables to soften while absorbing the flavors.
  5. Add Broth and Simmer: Pour in the beef broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer uncovered for 60 minutes to tenderize the beef and blend the flavors thoroughly.
  6. Season and Garnish: After simmering, stir in the soy sauce and Korean red pepper flakes. Taste and adjust seasoning if needed. Finish by garnishing with the chopped green onions just before serving to add fresh flavor and color.

Notes

  • You can substitute the beef with short ribs for a richer flavor.
  • Adjust the Korean red pepper flakes according to your spice tolerance.
  • For an extra depth of flavor, consider adding a splash of rice wine during the sauté step.
  • This soup tastes even better the next day as the flavors meld.
  • Serve with steamed rice or noodles for a complete meal.
