- Salt and black pepper, to taste
- 1 tsp paprika
- 1 tsp garlic powder
- Zest and juice of 2 limes
- 3 tbsp honey
Base and Toppings
- 2 cups cooked white or jasmine rice
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 2 tbsp chopped fresh cilantro (optional)
Instructions
- Heat the olive oil and season chicken: Heat olive oil in a large skillet over medium heat. Season the bite-sized chicken pieces with salt, black pepper, paprika, and garlic powder, ensuring the chicken is well coated with the spices.
- Cook the chicken: Add the seasoned chicken to the skillet and cook for 6–8 minutes, stirring occasionally, until the chicken is golden brown and fully cooked through.
- Add glaze ingredients: Reduce the heat to low and stir in the lime zest, lime juice, and honey into the skillet with the chicken.
- Simmer to glaze the chicken: Let the chicken simmer for 2–3 minutes, stirring gently until it is glossy, well coated, and fragrant from the honey-lime glaze.
- Assemble the rice stack: On a plate or in a bowl, add a layer of warm cooked rice as the base for the dish.
- Top with glazed chicken and garnishes: Place the honey lime glazed chicken over the rice, then sprinkle generously with crumbled feta cheese and fresh chopped parsley and cilantro for a burst of fresh herb flavor.
- Serve immediately: Serve this dish while warm to enjoy the full combination of glazed chicken, creamy feta, and bright herbs.
