Description

This comforting Pork Chops and Rice Casserole is a hearty one-dish meal perfect for a family dinner. Tender pork chops bake atop a creamy, flavorful rice mixture seasoned with mushroom soup, beef broth, and a blend of aromatic spices. The casserole is covered and baked to lock in moisture, resulting in juicy pork and perfectly cooked rice infused with savory onion and herb flavors.

Ingredients

Scale

Pork Chops

  • 4 thick-cut pork chops (bone-in or boneless, per preference)
  • 1 packet (1 ounce) Lipton Onion Soup & Dip Mix or other seasoning blend

Rice Mixture

  • 1 can (10.5 ounces) condensed cream of mushroom soup, undiluted
  • 2 cups beef broth
  • 1 cup uncooked long-grain white rice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried chives
  • 1/4 teaspoon onion powder

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Lightly coat a 9 x 13-inch baking dish with cooking spray to prevent sticking.
  2. Prepare the Rice Mixture: In a large bowl, combine the condensed cream of mushroom soup, beef broth, uncooked long-grain white rice, garlic powder, dried chives, and onion powder. Whisk the ingredients thoroughly until the mixture is smooth and well blended. Pour this evenly into the prepared baking dish.
  3. Arrange the Pork Chops: Pat the pork chops dry with paper towels to promote even cooking. Place them evenly on top of the rice mixture in the baking dish.
  4. Season the Pork Chops: Sprinkle the Lipton Onion Soup & Dip Mix or your chosen seasoning blend evenly over the pork chops. For a milder onion flavor or less sodium, feel free to use only half the packet.
  5. First Bake: Cover the baking dish tightly with aluminum foil to retain moisture and place it in the preheated oven. Bake for approximately 30 minutes. Check the pork chops for an internal temperature of 145°F (63°C). If fully cooked, remove the pork chops, cover with foil, and set aside to rest.
  6. Finish Cooking the Rice: Stir the rice mixture gently to help blend the flavors. Re-cover the baking dish and return it to the oven. Bake an additional 25 to 30 minutes, or until the rice is tender and most of the liquid is absorbed.
  7. Serve and Garnish: After baking, fluff the rice with a fork. Serve the rice alongside the pork chops and garnish with fresh parsley or basil if desired for added color and freshness.

Notes

  • For lower sodium, use only half the seasoning packet.
  • Pork chops can be bone-in or boneless according to preference.
  • Ensure pork reaches an internal temperature of 145°F (63°C) for safe consumption.
  • If you prefer a creamier rice, you can stir in a splash of milk or cream after baking.
  • Fresh herbs like parsley or basil add a bright finishing touch but are optional.
