- 1 tbsp taco seasoning (or 1/2 tsp each chili powder, garlic powder, onion powder, paprika, cumin)
- 1 can Rotel (10 ounces, or 1 can diced tomatoes with chilies)
- 1 brick Velveeta cheese (2 cups, 16 ounces, cubed)

- Diced tomatoes (reserve 1 tbsp for garnish)
- Chopped fresh parsley or cilantro
- Chopped green onions
Instructions
- Cook the Ground Beef: Heat a large skillet or frying pan over medium heat. Add 1 lb of ground beef and break it apart with a wooden spoon. Cook for approximately 5 minutes until no pink remains and the meat is fully cooked. Drain any excess fat to reduce greasiness.
- Add Seasoning and Tomatoes: Reduce heat to medium and stir in 1 tbsp of taco seasoning along with 1 can of Rotel including the juices. Cook for 2 to 3 minutes until the mixture is fully combined and gently simmering. Optionally, set aside 1 tbsp of diced tomatoes to use as garnish later.
- Melt the Cheese: Add the cubed Velveeta cheese (16 ounces) to the skillet. Stir continuously until all the cheese has melted and blended smoothly with the beef and tomatoes, forming a creamy dip.
- Garnish and Serve: Optionally, garnish the dip with reserved diced tomatoes, freshly chopped parsley or cilantro, and sliced green onions. Serve immediately with tortilla chips, crostini, or toasted baguette slices for dipping and enjoy!
