Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the spaghetti or linguine according to the package directions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta.
  2. Prepare the sauce base: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes and sauté for about 30 seconds until fragrant, taking care not to burn the garlic.
  3. Add wine and tomatoes: Pour in the dry white wine and let it simmer for 2 to 3 minutes to reduce slightly. Stir in the crushed tomatoes, salt, black pepper, dried oregano, and dried basil. Simmer the sauce gently for 10 minutes to blend the flavors.
  4. Cook the seafood: Add the mixed seafood (shrimp, scallops, and mussels) to the skillet and cover with a lid. Cook for 4 to 6 minutes, stirring occasionally, until the shrimp turn pink, scallops become opaque, and the mussels open. Discard any mussels that remain closed.
  5. Finish the sauce: Stir in the unsalted butter and chopped fresh parsley to enrich the sauce and add freshness.
  6. Combine pasta and sauce: Add the drained pasta to the skillet with the seafood sauce and toss gently to coat the pasta evenly. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
