- 3 cups cooked, shredded beef, chicken, pork, or steak
- 2 cups red or green enchilada sauce (homemade or store-bought)
- 1 can black beans or pinto beans, drained and rinsed (or refried beans)
- 1½ cups Mexican rice (or cilantro-lime rice, white or brown)
- 2 cups shredded mozzarella cheese or cheese of choice, divided
- 5 large flour tortillas (burrito size)
Optional Fillings
- Sautéed bell peppers and onions
- Roasted corn
- Shredded cabbage
Serving Accompaniments
- Sour cream
- Guacamole
- Pico de gallo or salsa
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
- Assemble Burritos: Lay one large flour tortilla flat on a surface. Layer 3 cups of cooked shredded meat, 1 can of drained beans, 1½ cups of Mexican rice, and a generous sprinkle of shredded cheese on the tortilla. Be careful to fill well but not overstuff to maintain the ability to roll the burrito tightly.
- Roll Burritos: Fold in the sides of the tortilla and roll it tightly from one end to another, keeping the filling secure. Place the rolled burrito seam-side down on the prepared baking sheet. Repeat this process until all tortillas are filled and rolled.
- Bake Burritos: Place the baking sheet in the preheated oven and bake the burritos for approximately 20 minutes, or until heated through.
- Warm Enchilada Sauce: While the burritos bake, gently warm the 2 cups of enchilada sauce in a saucepan over low heat or microwave until heated.
- Add Sauce and Cheese: Once the burritos are out of the oven, spoon the warm enchilada sauce generously over each burrito. Sprinkle the remaining shredded cheese evenly on top.
- Melt Cheese: Return the baking sheet to the oven for a few minutes just until the cheese melts and becomes bubbly.
- Serve: Serve the hot wet burritos immediately, accompanied by sour cream, guacamole, and pico de gallo or salsa for added flavor and freshness.
Notes
- You can customize the filling by choosing your favorite protein: beef, chicken, pork, or steak.
- Use either red or green enchilada sauce depending on your flavor preference.
- Optional fillings like sautéed bell peppers, onions, roasted corn, or shredded cabbage add extra texture and nutrition.
- For a healthier twist, substitute flour tortillas with whole wheat or low-carb tortillas.
- To save time, use store-bought enchilada sauce or make it ahead of time.
- Serve with a side of rice and beans for a complete meal.
